Peanut Butter Cheesecake Brownie Babies june 09


Okay so i made these peaut butter cheesecake brownies and they were to die for Oh my! I made these in June around my anniversary i remember cause i got one dozen red roses for my anniversary, I remember i needed help eating them so i took them over to a friends house since i am the only one that likes peanutbutter. I remember i sent her a pic of them ad she said that wasn't very nice unless i planned on sharing so i packed them up and went on my way over. I will post the recipe, as many will know i love to cook and bake so i love posting recipes!
Prep Time: 20 min Total Time: 50 min Makes: 20 servings, 1 brownie each What You Need! 1 pkg. (19 to 21 oz.) brownie mix (13x9-inch pan size) 1 pkg. (8 oz.) PHILADELPHIA Cream Cheese, softened 1/3 cup sugar 1 egg 1/4 cup peanut butter 1/2 tsp. vanilla 1-1/2 cups thawed COOL WHIP Whipped Topping 20 maraschino cherries Make It! HEAT oven to 350ºF. PREPARE brownie batter as directed on package. Spoon into 20 paper-lined muffin cups. BEAT cream cheese, sugar, egg, peanut butter and vanilla with mixer until blended. Spoon 1 rounded Tbsp. into center of batter in each cup, pressing down slightly into batter. Bake 22 min. or until centers are set. Cool. SERVE topped with COOL WHIP and cherries. Kraft Kitchens Tips Variation Prepare using PHILADELPHIA 1/3 Less Fat Cream Cheese and COOL WHIP LITE Whipped Topping. Cheesecake Brownie Babies Prepare as directed, omitting peanut butter.

June 15 2009 Yoslina and Sapna Bday celebration!
















On monday June 15 , I went out to Johnny Corinos for dinner to celebrate Yoslina and Sapna's Birthdays w friends and people from work! It was really fun i remember since i am way over due on this event i have to think about the night. Both of the girls work at Macys but we work in different departments. I think this is the first time i went out w such a huge party, they each had there own friends ad family come. I do remember that i arranged it. It ended up turning out to be a great evening. when we left the restraunt the four of us Girls Sapna, me ad her two sisters took pics outside yes we are silly girls and wanted to get some good memories on digital film. and than we all went over to Yoslinas house in Boise for a bit, all of us girls took some pics outside the house, till it was time to go home.

June 13 2009 Mona Lisa

we went to the mona lisa for our anniversary. It is a fondue restraunt in downtown Nampa i love fondue. I have a fondue pot myself and i need to use it( i even have teh sterno for it). I need to have a party sometime or take it somewhere that i can use it! Any excuse to dip somethig in chocolate is great! I can just imagine all the things strawberries, banannas, marshmellows, pretzels, pound cake and coconut maccaroons..yummie!!!! I also went there once just for dessert once w my friend stephanie and that was fun!

Taylor Swift concert






In the end of May i went to the Taylor Swift concert with my older sister Erica ad my little baby sister Rebecca(she won't like i refered to her has baby). It was the first time i had been to a concert since i thik the american Idol concert years ago and than in high school. This was the best concert i have been too! I just love Taylor Swift! My friend Kim has a pic w her and Taylor before she was so popular.I felt we had really good seats. it was fun doing somethig as sisters. I thik my younger sister was sad she wasn't there w her friends i guess who wants to hang out w a bunch of old people(to a teenager) at a concert. It was also her first concert ad i tried to get her to stand up and wave her arms and to cheer! She just looked at me funny so i pulled her up and grabbed her arms as she just laughed at me like i was just silly and like we were a bunch of weirdos.

In may of 2009 my brother matthew graduated from Eagle high school. He is the second to the last child. We are very proud of him!

march of 09 gayle & kids

In the end of March of 09 my sister gayle moved back here w her 2 daughters ad her 2 sons my nieces& nephews) from New Mexico. It was finally the first day outside it was nice. It was a sunday afternoon. We met at the park in Nampa w Gayle(kids), my mom ad my young sis. I was pushing the kids on the swings and taking there pics some how i am missing pic of William(he was just a baby i remember) I rmember it was a very nice quality family time w just the 3 adults and the kids and thinking how greatful i am for spring(it is my fav time of year) when we are blessed w the warmer weather or it starting to come. and the time we get to spend outside.

coconut creme macaroons

coconut creme macaroons
1/3 cup butter softened
1 package(3oz) cream cheese, softened(okay if you have ever seen in 3 oz let me know i bought reg and cut 3 oz, lol)
3/4 cup sugar
1 egg yolk
2 tsp almond extract
2 tsp orange juice
1 - 1/4 cup flour
2 tsp baking powder
1/4 tsp salt
5 cups sweetened coconut flakes, divided
48 hershey kisses
1. beat butter, cream cheese and sugar in large bowl until well blended. add egg yolk, almond extract and orange juice, beat well. Stir together flour, baking powder and salt, gradually add to butter mixture, beating until well blended. stir in 3 cups coconut.
2. cover, refrigerate one hour or util firm enough to handle. Remove wrappers from chocolates. heat oven to 350 degrees. shape dough into 1 inch balls, roll balls in remaining coconut. place on cookie sheet.
3. Bake 10-12 mins( i think i baked little longer didn't seem long enough) or until lightly browned. removed from oven, immediately press chocolate on top of each cookie. cool and enjoy!
